  • 4 whole grain panini rolls (240g)

  • 125g fresh mozzarella, sliced

  • 2 medium roasted red peppers (120g)

  • 1 large grilled courgette (150g)

  • 100g baby spinach leaves

  • 8 sun-dried tomatoes (40g)

  • 2 tbsp pesto (30g)

  • 1 tbsp olive oil (15ml)

  • 1 tsp dried oregano

  • Pinch of black pepper

  • Pinch of sea salt

Step 1 - Slice panini rolls horizontally and lightly brush outer sides with olive oil

Step 2 - Spread 1/2 tbsp pesto on the inside of each roll

Step 3 - Layer bottom half of each roll with spinach leaves

Step 4 - Add sliced roasted peppers

Step 5 - Layer grilled courgette slices

Step 6 - Add sun-dried tomatoes (2 per panini)

Step 7 - Top with mozzarella slices

Step 8 - Sprinkle with oregano, salt, and pepper

Step 9 - Close panini and press in a preheated panini maker or grill pan

Step 10 - Cook for 5-7 minutes until cheese melts and bread is golden
