Ingredients

For the Wholemeal Crust:

  • 200g wholemeal flour

  • 100g cold butter

  • 60ml cold water

  • 1/4 tsp sea salt

For the Filling:

  • 3 large onions, sliced (450g)

  • 150g soft goat's cheese

  • 6 large free-range eggs

  • 200ml semi-skimmed milk (or Plant Milk Alternative)

  • 200g baby spinach

  • 2 tbsp olive oil (30ml)

  • 2 tbsp balsamic vinegar (30ml)

  • 2 sprigs fresh thyme

  • 1 tsp dried herbs

  • 1/4 tsp black pepper

  • 1/4 tsp sea salt

Step 1 - Mix flour and salt in a large bowl

Step 2 - Rub the cold butter into the flour until the mixture resembles breadcrumbs

Step 3 - Add cold water gradually, forming a dough

Step 4 - Wrap and chill dough for 30 minutes

Step 5 - Meanwhile, heat olive oil in a large pan over low heat

Step 6 - Add sliced onions and cook slowly for 20 minutes, stirring occasionally

Step 7 - Add balsamic vinegar and thyme, and cook for an additional 5 minutes until caramelised

Step 8 - Wilt spinach in a separate pan

Step 9 - Roll out pastry and line a 23cm quiche tin

Step 10 - Blind bake at 180°C for 15 minutes

Step 11 - Whisk eggs, milk, salt, and pepper

Step 12 - Layer caramelised onions and spinach in the pastry case

Step 13 - Crumble goat's cheese over vegetables

Step 14 - Pour over egg mixture

Step 15 - Bake at 180°C for 30-35 minutes until set
