For the Base:

  • 200g rolled oats

  • 100g mixed nuts (almonds, walnuts), roughly chopped

  • 50g pumpkin seeds

  • 50g sunflower seeds

  • 30g chia seeds

  • 2 tbsp ground cinnamon

  • 1/4 tsp sea salt

For the Binding:

  • 120g Medjool dates, pitted

  • 3 tbsp honey (45ml)

  • 2 tbsp almond butter (30g)

  • 2 tbsp coconut oil (30ml)

  • 1 tsp vanilla extract

Step 1 - Preheat oven to 160°C

Step 2 - Toast oats, nuts and seeds for 10 minutes

Step 3 - Blend dates until they form a paste

Step 4 - Gently heat honey, almond butter, and coconut oil

Step 5 - Mix toasted ingredients in a large bowl

Step 6 - Add date paste and warm liquid mixture

Step 7 - Stir until well combined

Step 8 - Press firmly into the lined 20x20cm tin

Step 9 - Bake for 25 minutes until golden

Step 10 - Cool completely before cutting

Step 11 - Cut into 12 bars
