Ingredients
200g natural peanut butter (no added sugar)
150g rolled oats
100g pitted dates, finely chopped
30g chia seeds
30g ground flaxseed
2 tbsp honey
1 tsp vanilla extract
30g dark chocolate chips (85% cocoa)
20g desiccated coconut (for rolling)
Pinch of sea salt

Step 1 - Place the chopped dates in a bowl and soak in warm water for 5 minutes to soften, then drain well.
Step 2 - In a large mixing bowl, combine the peanut butter, honey, and vanilla extract until smooth.
Step 3 - Add the rolled oats, softened dates, chia seeds, ground flaxseed, and sea salt to the peanut butter mixture.
Step 4 - Mix everything until well combined and the mixture holds together when pressed.
Step 5 - Gently fold in the dark chocolate chips.
Step 6 - Cover the bowl and refrigerate for 30 minutes to allow the mixture to firm up.
Step 7 - Using your hands, roll the mixture into 16 equal-sized balls (about 30g each).
Step 8 - Roll each ball in desiccated coconut until evenly coated.
Step 9 - Place the energy balls on a tray and refrigerate for another 15 minutes to set.
Step 10 - Store in an airtight container in the refrigerator for up to 1 week.
