Ingredients
For the Protein (choose one):
500g chicken breast, sliced OR
400g mixed mushrooms and 1 tin black beans (400g), drained
For the Vegetables:
3 mixed peppers, sliced (360g)
2 large onions, sliced (300g)
2 courgettes, sliced (240g)
3 garlic cloves, minced (9g)
2 tbsp olive oil (30ml)
For the Marinade/Seasoning:
2 tbsp lime juice (30ml)
2 tsp ground cumin
2 tsp smoked paprika
1 tsp ground coriander
1 tsp dried oregano
1/4 tsp chilli powder
1/4 tsp sea salt
1/4 tsp black pepper
To Serve:
8 wholemeal tortillas (320g)
120g low-fat natural yoghurt
1 lime, cut into wedges
Fresh coriander
1 avocado, sliced (150g)

Step 1 - Mix all marinade ingredients in a bowl
Step 2 - Add protein choice and coat well, leave for 30 minutes if time allows
Step 3 - Heat 1 tbsp oil in a large pan over medium-high heat
Step 4 - Cook protein until done (8-10 minutes for chicken, 5-7 for mushrooms)
Step 5 - Remove protein from the pan and set aside
Step 6 - Add the remaining oil to the pan
Step 7 - Add onions and peppers, cook for 5 minutes
Step 8 - Add courgettes and garlic, cook for 3 minutes
Step 9 - Return protein to pan, stir to combine
Step 10 - Warm tortillas according to package instructions
Step 11 - Serve with yoghurt, lime wedges, and fresh coriander
