For Toppings:
200g reduced-fat mozzarella
100g cherry tomatoes, halved
Fresh basil leaves
2 tbsp extra virgin olive oil (30ml)
Optional vegetables: mushrooms, peppers, spinach
Ingredients
For the Dough:
300g strong wholemeal bread flour
200g strong white bread flour
7g active dried yeast
1 tsp honey
300ml lukewarm water
2 tbsp olive oil (30ml)
1/2 tsp sea salt
For the Sauce:
400g tinned San Marzano tomatoes
2 garlic cloves, minced (6g)
1 tbsp fresh basil, chopped
1/4 tsp sea salt
1/4 tsp black pepper

Step 1 - Mix lukewarm water with honey and yeast, leave for 5 minutes
Step 2 - Combine flours and salt in a large bowl
Step 3 - Add olive oil to the yeast mixture, then pour into the flour
Step 4 - Knead for 10 minutes until smooth and elastic
Step 5 - Place in oiled bowl, cover, and prove for 1.5-2 hours
Step 6 - Meanwhile, blend the sauce ingredients until smooth
Step 7 - Divide the dough into two balls
Step 8 - Preheat oven to highest setting (240-250°C) with pizza stone/tray
Step 9 - Roll each dough ball into a 30cm circle
Step 10 - Spread sauce thinly over bases
Step 11 - Add toppings and drizzle with olive oil
Step 12 - Bake each pizza for 12-15 minutes until crisp
Step 13 - Add fresh basil after baking
