Ingredients
200g fresh spinach leaves
150g cucumber, chopped
100g green apple, cored and chopped
50g celery stalks, chopped
30g fresh ginger, peeled
15ml fresh lemon juice (about 1/2 lemon)
15ml fresh lime juice (about 1/2 lime)
300ml coconut water
1 tsp cayenne pepper
5g fresh mint leaves

Step 1 - Wash all fresh produce thoroughly under cold running water and pat dry with a clean kitchen towel.
Step 2 - Roughly chop the cucumber, apple, and celery into chunks that will fit easily into your juicer or blender.
Step 3 - Peel the ginger using a spoon or vegetable peeler, then slice into smaller pieces for easier processing.
Step 4 - If using a juicer, feed the spinach, cucumber, apple, celery, and ginger through the machine alternating between soft and hard ingredients for optimal extraction.
Step 5 - If using a high-speed blender, add the coconut water first, then all the solid ingredients, and blend on high for 60-90 seconds, until the mixture is completely smooth.
Step 6 - Strain the mixture through a fine mesh sieve or a nut milk bag, if using a blender, pressing the pulp to extract the maximum juice.
Step 7 - Stir in fresh lemon juice, lime juice, and cayenne pepper until well combined.
Step 8 - Add fresh mint leaves and gently muddle to release their flavour without over-bruising.
Step 9 - Serve immediately over ice or chill in the refrigerator for up to 2 hours before consuming for the best taste and nutritional value.
