Ingredients

  • 200g fresh pineapple, cored and chopped

  • 150g watermelon, deseeded and chopped

  • 100g cucumber, chopped

  • 50g coconut flesh (fresh or frozen)

  • 20ml fresh lime juice (about 1 lime)

  • 250ml coconut water

  • 5g fresh basil leaves

  • 1 tsp sea salt (optional, for electrolyte boost)

  • Ice cubes for serving

Step 1 - Wash all fresh produce thoroughly and pat dry with a clean kitchen towel.

Step 2 - Remove the skin and core from the pineapple, then chop into chunks suitable for your juicer or blender.

Step 3 - Cut watermelon into pieces, removing seeds and rind, keeping only the sweet flesh.

Step 4 - Chop cucumber into smaller pieces, leaving the skin on for added nutrients and fibre.

Step 5 - If using fresh coconut, crack open and extract the flesh; if using frozen, allow to thaw slightly.

Step 6 - If using a juicer, alternate feeding soft fruits (watermelon, pineapple) with firmer ingredients (cucumber, coconut) for optimal juice extraction.

Step 7 - If using a high-speed blender, add coconut water first, then all solid ingredients and blend for 90 seconds until completely smooth.

Step 8 - Strain through a fine mesh sieve if using a blender, pressing pulp to extract maximum liquid.

Step 9 - Stir in fresh lime juice and sea salt (if using) until well dissolved.

Step 10 - Garnish with fresh basil leaves and serve immediately over ice for maximum refreshment and nutrient retention.
